Culinarily, Spain is filled with a diverse history, serving as a cultural melting pot of the Mediterranean and northern Africa. The Spanish trade routes provided influences from all over the globe and a strong connection to the land from the culinary foundation of Spain – from small tapas bars to Michelin star restaurants.

Regenerative ranching is not a new concept. It's a return to the balanced systems that nature designed. Grassland ecoystems coevolved with hooved animals like bison, elk, and antelope. Through allowing cattle to engage in their natural behaviors and follow an extended, holistic life cycle, grasslands are regenerated. This approach fosters a balance between the land and the ranchers managning it, nurturing the earth as it was meant to be.
We take pride in our prized cuts – from local ranchers to the best Japanese A5.
While we take pride in our sustainably-sourced seafood and vegetables, the focal point of our restaurant is the dry-aged display case located in our dining room. We encourage our patrons to experience our bone-in ribeyes and NY strips. Our artisanal aging process concentrates the flavor and brings out the true taste of the beef.

While our cattle history is always portrayed as “American”, it actually points all the way back to the Iberian Peninsula. The Spanish are to thank for our strong horse and cattle culture in the American West. And not only is Colorado home to a strong ranching community, we also host the annual National Western Stock Show in Denver, one of the biggest in the country.
