Din Tai Fung

Taipei, Taiwan

With its simple tiles, tick-box menu and army of chefs wearing white baseball caps, Din Tai Fung looks – at first glance – like many other fast-food joints in Taipei. However, the original site of this much-loved chain (which has outposts all over the world) opened in 1958 and today it is still run by Yang Chi-hua, son of the founder Yang Bing-yi. From wontons to sticky rice wraps, attention to detail is everything. The signature serve is the cloud-like xiaolongbao steamed bun, their delicate skin complete with 18 folds, although the noodle soups also have a cult following.
